When I started this blog I named “Go Zest Yourself” after the fact that I f*cking hate zesting. But I love to cook. And I love to cook vegan. However the name of this means more to me now than just my passion for limes and despise of zesting them. After 2+ years of being chronically being ill, I was diagnosed with Lyme Disease.
On a positive, knowing this has been amazing because I have been able to start treatment. On the down side, I am considered late stage it and it has affected my heart, joints, gastrointestinal system, nervous system, and after a ER trip last week I am waiting for results back to see if it’s spread to the meninges of my brain.
This has caused a lot of crashes, some I felt in Europe, but progressively got worse with treatment, which I’ve been told is normal. That being said I was advised to start a diet that removes sugar, soy, gluten, dairy, legumes, grains, and even quinoa. As well as additives, preservatives, and so forth.
As I’m sure most of my followers are vegan, you know that when being told to avoid these food items you are REALLY limited with our lifestyle.
Now once I go into remission I will have the flexibility to move back towards the dietary and ethical lifestyle I prefer. Until then however, I must be honest and say I am not currently able to maintain it.
Over the past month or so I’ve considered posting recipes that vegan and within my dietary guidelines. And, I may actually still do it! It’s still my passion and I don’t want it to go away but I felt that being honest about my current situation first was the more appropriate path.
I hope that everyone is able to understand the current situation and I really appreciate all of you who have followed me so far on my culinary journey:)
