A Winter Meal Prep.
I haven’t been feeling very well so my meals have been basic and things I can reheat. Here’s a really hearty recipe for when you feel the same.
What you need:
-1 bag of vegetable “beef” mince (I used beyond beef crumbles)
-1 bell pepper (I used a yellow one, but you can choose yours)
-4 cloves of garlic minced
-1 8oz can of tomato paste
-1 tsp kosher salt
-1 yellow onion diced small
-1 can of black beans
-1/4 cup of water
-1 can of diced tomatoes
-1 tsp (each) turmeric, cayenne pepper, smoked paprika.
Put the instant pot on sauté. Add your water, onion, bell pepper, and garlic. Sauté till fragrant.
Add the rest of your ingredients and mix until incorporated. Then pop on the lid and hit the BEANS/CHILI button.
Once done, serve!!
