Cashew Sour Cream

You can put it on everything! 

I used to eat sour cream on everything, potatoes, steak, pizza. There really was no stopping me. I like vegan sour cream you can buy in the store but not in the same was as the dairy based one. Here is a much more addictive sour cream that you can make yourself.

What you need to make sour cream:

-1 cup soaked cashews

-1/4 tsp kosher salt

-1 tbsp. almond milk

-Juice of 1 lemon

-1/4 cup water

You want to soak your cashews at least 8 hours or for up to a week. If you soak them longer than 24 hours, make sure to drain the water and refill it each day.

Start by taking 1 cup of soaked cashews and put them in a blender. Add the all the remaining ingredients.

Now to unless you have a Vitamix you want to make sure you don’t burn out your blender. To do this is blend on high for 10 seconds, then stop it for 20 seconds. Keep doing this till you achieve the right consistency!
