Cheap and easy sushi.
Hubz and I love sushi, but it’s very expensive in the city. We may be able to get it delivered to our apartment at 11pm, but again it’s a bit pricey and for the types of rolls (vegan) I want, I can just make them myself. I did make the rice using an instant pot, so if you don’t have one (or a rice cooker) read the packaging for your rice to see how long it needs.
What you need to be Iron Chef Sushi Master:
-2 to 4 nori sheets (1 for each roll intended to be made
-1/4 cup Tamari
-Wasabi to taste
-1/2 avocado sliced
-1 tbsp vegan cream cheese per roll
-Rice seasoning (optional)
-2 cups of short grain white rice
-2 tbsps. organic cane sugar
-2 1/2 cups water
-1/2 cup rice wine vinegar
-1/2 tsp kosher salt
For Side Salad:
-1 cup romaine lettuce chopped
-Instant pot or rice cooker
-Serrated bread knife
To start, whisk in your instant pot the water, rice wine vinegar, salt, and sugar. This is the same recipe as my poke bowl . Take your rice and put it into a strainer and rinse well with cold water. Add the rice to the instant pot and hit the RICE button.
Place a nori sheet on the rolling mat, gather your other supplies and make sure to have a tiny bowl of water for sealing the roll.
Smash your rice onto the nori sheet.
Add your avocado and cream cheese. Note that nori smells like fish even though it contains none…so if you got cats…enjoy this f*cking party yo.
Roll the mat half way with the sushi and pull in towards your chest.
Pull it again and roll.
Slice the roll with the bread knife as I find it works best. Then garnish with the rice seasoning for a boost of flavor. Toss your romaine with the carrot ginger dressing. And mix your wasabi and tamari in a small little cup.
Plate and serve!! To give you a break down nori sheets cost about $5, tamari is $3, wasabi $3, rolling mat was $3, bag of rice is $3, and rice seasoning $5. But you will use this ingredients probably 20 times. So this is a great CHEAP way to make sushi!!
