Cats & tacos, tacos & cats, make a burrito and get a purrito…dab
I suffer from myalgic encephalomyelitis or ME/CFS. I don’t think I’ve mentioned on this blog but it was a huge influence in my decision to go plant based and then become vegan. One of the downsides of what I’m dealing with is extreme low energy and a slowed metabolism. With the new year starting I want to try and focus on a more high carb-low fat vegan diet. These are typically the diets you hear about that are health focused, such as the China Study.
Anyway I also wanted a damn taco so this is what I made.
What you need for taco greed: makes 6-8 tacos
-1 block extra firm tofu
-1/2 red bell pepper diced
-1/4 cup chopped cilantro
-1/4 cup shredded carrot
-1/2 small red onion diced
-1-4 limes depending on amount of tacoooooooos
-1 tsp kala namak salt
-2 tbsp. nutritional yeast
-1 tsp garlic powder
-1 tsp onion powder
-1 tbsp. turmeric
-Fresh ground pepper to taste
-1/4 cup vegan beef crumbles (I used beyond meat)
-Corn tortillas 1 per taco
Combine the red bell pepper, cilantro, red onion, and shredded carrot into a bowl. Squeeze 1/2 of a lime into and let it sit to marinate while you start the scramble.
Bust open a tofu package and instead of draining the water, pour into a non stick pan on medium/high heat. You will not be cooking this in oil…shocking I know. Add your onion powder, garlic powder, kala namak, fresh ground black pepper, turmeric, and nutritional yeast. Mix well.
Add your beef crumbles and veggies and appreciate the colors that veggies give you. Mix well, turn the heat to low and cover for 3 minutes to soften the veggies up a bit.
I added a tiny amount of avocado which honestly I don’t think I needed that much. Topped with some sriracha and more lime juice. The flavor was banging and I preferred this scramble to the one I cook with oil!
