Vegan Peppermint Mocha + Coconut Whipped Cream

Because I don’t bother trying at other places anymore. 

So for this recipe I actually filmed a little video which I’ll link below.

What you need: serves 2

For the mocha:

-1 13oz can of coconut milk

-1 tbsp. vegan cocoa powder

-1 tbsp. organic coconut sugar

-1/2 tsp peppermint oil

-1/2 tsp instant coffee

For the whipped cream:

-1 can of coconut cream

-1 tsp vanilla extract

-1 tbsp. organic coconut sugar


Step 1: Pour coconut milk into pot and whisk to break up an solid parts. Then add your peppermint oil, cocoa powder, instant coffee, and coconut sugar. Whisk while on high heat until it starts to boil then bring down to a low simmer.

Step 2: Using a hand mixer or stand mixer like I have combine the coconut cream (leave the remaining water in the can) with the sugar and vanilla extract. Turn on high till you get a whipped consistency.

Step 3: Combine steps 1 and 2 into a mug and enjoy!!


*Note the whipped cream didn’t look very pretty but it tasted amazing.
