Let’s get jacked.
It’s 11:52am and I am f*cking hungry! As you know from the BBQ jackfruit I bought a case of jackfruit in the brine from Amazon. I want a simple dish right now like there is no tomorrow. My mom used to always buy Tuna in oil then ask me to make her a sandwich. It was the tuna + mayo + celery + pepper on bread. It was quite tasty, but I think I can elevate this into something packing even more flavor. Let’s give it a go…
HOW YOU GONNA GET JACKED:
-1 can of Jackfruit in the brine, drained and rinsed
-2 tbsp. vegan may
-1/2 tsp Dijon mustard
-1 tbsp. fresh dill minced
-1 shallot minced
-1 celery stalk sliced
-1/4 tsp kosher salt
-1/4 tsp fresh ground pepper
-1/4 tsp celery seed
-1/2 sheet nori minced
-Juice from 1/2 lemon
-Butter lettuce or bread to make a sandwich or wrap (optional)
After you’ve drained and rinsed the jackfruit, pop it on the stove and let it boil for about 10 minutes until softened.
Then chop it up as small as you can get it!
Combine all of your ingredients into a bowl….
Then mix and BAM you got a delicious lunch or snack! I chose to put mine on butter lettuce because I’m not feeling great today and I didn’t want anything to heavy. The nori/dill/celery seed really enhanced the flavors that make me think Tuna salad.
