A Waldorf-esque Salad

I want to eat this every day for the rest of my life.

Before I understood the basics of what constructs a good balance in a salad; I made some pretty terrible ones at salad bars. I was also not vegan then, so the worst one I can recall was  a mixed green salad with hard boiled egg, avocado, goat cheese, and raspberry vinaigrette. It looked like pink brains and tasted disgusting.

However this salad is f*cking amazing you need it in your life!

What you need: (serves 2)


-2 cups chopped red cabbage

-2 cups arugula

-1 celery stalk sliced thinly

-2 tbsp. of chopped fresh dill

-1/2 shallot sliced thinly

-1 apple, cored, and thinly sliced

-1/4 cup dried cranberries

-1/4 cup chopped walnuts


-1 tbsp. vegan mayo

-1 tbsp. vegan sour cream

-1 tsp apple cider vinegar

-1 tsp safflower seed oil

-1 tsp maple syrup

-1/2 tsp Dijon mustard


Step 1: Take all of your salad ingredients and put them in a bowl.


Step 2: Put all of your dressing ingredients into a bowl and mix with a fork.


Step 3: Combine steps 1 and 2.


Step 4: ENJOY!
