Because we should eat sugar cookies whenever the f*ck we want!
I got a craving for Celestial Seasonings “Sugar Cookie Sleigh Ride” tea. Hubz was going to the grocery store and brought back “Tension Tamer” tea. After tossing the box at the back of his head I decided to make some Sugar cookies. Here’s how:
What you need to eat in front of the Christmas tree:
-1 cup vegan butter softened
-1 cup organic table sugar
-3 teaspoons vanilla extract
-2 servings of vegan egg
-2 1/2 cups all purpose flour
-1/2 teaspoon baking powder
-1/4 teaspoon kosher salt
-1 cup powdered sugar
-2 tbsp. plant based milk
-Food coloring of choice
Start by preheating the oven to 350 degrees f. In a large bowl combine your dry ingredients and mix. In a smaller bowl do the same with the wet ingredients. Then combine the two. I was able to avoid using a hand mixer and just got the batter to form together with my hands. You can add a little bit of water if it’s separating and not sticking together. P.s don’t eat all the batter.
Once the batter is into a dough ball place it between to sheets of parchment paper and use a rolling pin to get it about 1/4 inch thickness. Then go through with your cookie cutter and pull out the cookies and set aside. Reform the dough and do it again and continue to repeat until all the cookies have been cut.
Add some parchment paper to a baking sheet and place the cookies in the oven for 15 minutes. While you wait you can make the icing.
All you need to do is mix the milk and powdered sugar. Very easy. I decided instead of holiday colors I wanted to see neon ones because….that’s the food coloring I had.
Once your cookies have fully cooled you can start to decorate!
