Basil-Avocado Pesto Zoodles

Trying a raw vegan dish.

I watch a lot of different Youtubers, some vegan while others not. I find that inspiration can come from many different places. I was watching a few videos from FullyRawKristina . She believes in not only a vegan and whole foods plant based diet. But a RAW version of it. Which has very limited cooking and no processed foods. For my life style this isn’t feasible, but I wanted to try out a dish or two. Here’s what I tried:

What you need, that’s all green, but not mean, and may make you lean, hehe:

-1 cup basil

-1 cup arugula

-1/2 avocado

-2 zucchinis

-1 clove of garlic

-1 tbsp. water

-Juice from 1/2 lemon

-1/4 tsp salt

-1/4 tsp fresh ground black pepper

To get zoodles we need a Handheld Spiralizer, this is my favorite one.
I owned one that was really big and took up too much space in the kitchen. This is handy (no pun intended).  Spiralize 1 1/2 of the zucchini. Then dice the other half of the zucchini to use for the pesto.

Add the rest of the zucchini, basil, arugula, garlic, and lemon juice to the blender and start to blend.

You may need 1 tbsp. of water to help blend the pesto. You’ll want to stop every 10 seconds or so to push down the food from the sides of the blender. Once blended give it a taste and add the salt and pepper.

Combine your zoodles with your pesto and….

…BAM! You have a delicious and yummy lunch. I paired mine with some toasted rosemary bread and it was a lovely lunch!
