Tonight my favorite sister in-law (I’ve only got the one), who doesn’t read my blog (calling you out) is coming over for dinner. She is an omnivore but quite likes my cooking. I got a craving for some Beef and Broccoli which actually has simple bases to it. I’ve made a stir fry on here before and you’ll notice there are some staple ingredients that if you purchase them once you can make a lot of different dishes with them. Here’s how I made tonight’s dish!
What you don’t need to order tonight:
-3 cups broccoli either frozen (defrosted) for fresh (blanched)
-1 cup jasmine Rice
-1 1/2 cups water
-2 tbsp. sesame seed oil
-1/2 tsp sesame seeds (optional)
-1 scallion sliced (optional)
For the “Beef”:
-8oz box of cubed seitan (I used Westsoy by Yves)
–1 tsp tamari
-1 tsp corn starch
-1 tsp baking soda
-1 tsp rice wine vinegar
For the sauce:
-1 tbsp. tamari
-1 tbsp. vegan oyster sauce (made from mushrooms)
-1 tbsp. rice wine vinegar
-1 tsp organic cane or table sugar
-1 tsp corn starch
-1/4 tsp fresh ground black pepper
-1/4 tsp MSG (optional)
Using my Instant Pot I added one cup of rice and 1 1/2 cups water to start cooking. Then gathering the seitan and ingredients to season the beef, I added them to a tupper ware so I was able to give them a good toss and let them sit for a bit and marinate on the counter.
Mix all the ingredients for the sauce into a small bowl and whisk together. If you are nervous about using MSG I ask you why. If you can clearly construct why you shouldn’t use it then okay, totally don’t. Otherwise if you think it’s just “bad for health” check out this link about MSG. Either way it’s optional.
In a wok or large frying pan on medium/high heat add the sesame oil and then your “beef” get it to crisp slightly and then add your sauce. Once it’s thickened add your broccoli and give the wok a good shake so that you get everything incorporated.
Garnish with green onion and sesame seeds then serve!! It was REALLY yummy. My sister in law enjoyed it, my Hubz enjoyed it. I enjoyed it. It was quite easy to make, if you want a low-fat version you can opt out of the sesame oil. I hope you get a chance to try it and have an awesome weekend!!
