For thankful b*tches
This year Hubz and I decided to host a small Friendsgiving dinner in our apartment. If I’ve never told you my NYC apartment has a stove that operates at its own temperature, 2 pilots that don’t light. A dishwasher that’s demonic, and an electrical system where you can only run 1 appliance at a time. So we had to keep this small. A lot of what I made I’ve posted recipes before so I link them. The two new things to the blog are a recipe for creamed carrots, and a taste test of the Tofurky Ham and Tofurky gravy!
Ingriedients for creamed carrots:
-1 1/2 cups better than bouillon vegetable broth
-1 bag of carrots
-1/4 cup vegan butter
-1 tbsp. sugar
-2 tbsp. all purpose flour
-1 tsp salt
-1/2 tsp white pepper
-1 cup soy or creamer
Start by peeling and trimming your carrots. Cut the carrots in half and then half again long ways. Then get a pot with your pot boiling with the broth. Once boiling add your carrots and turn the heat down to a simmer.
For the cream start with melting the butter and then adding the sugar, flour, salt, and pepper. Mix until incorporated. Then slowly add your cream, simmer and continue to whisk until thickened.
Dish your carrots once softened and pour the cream on top. I like to give a little sprinkle of black pepper on top as well.
So I decided to try the tofurky ham and it did not disappoint! Everyone loved it. You simply preheat your oven to 375 f, and remove the “ham” from it’s casing. The box comes with a glaze. You put the ham into a roasting dish with half of the glaze on top. Cook covered for an hour and 15 minutes. Then remove the cover, add the other half of the glaze and cook uncovered for another 15 minutes, slice and serve.
Another side I added was my butter balsamic asparagus which you can click the link to see how to make that. I’ve never met a meat eater that didn’t love that side dish either.
I did my normal mashed potato recipe but I used an immersion blender but I really regretted that. The flavor was AMAZING but immersion blending messed up the texture a little bit. I’d go with traditional mashing.
The other dishes I had were the tofurky gravy which was delicious! Very easy, thaw from the freezer 24 hours prior. Pop into a sauce pan, cook for about 10 minutes and serve.
Also added some sliced tomatoes seasoned with salt and pepper, a favorite of Hubz. Some cranberry sauce. And of course the lemon cake I made yesterday.
All the food was delicious and my friends also brought dishes as well. Everything tasted like thanksgiving and was so lovely to enjoy. We played card games and a little bit on the Vive VR. Everyone stayed about 5-6 hours and it was a perfect dinner party if I do so myself…..
