Let them eat Lemon Cake

Sweet and tart just like you ๐Ÿ˜‰

Tomorrow I have some friends coming over to do a “Friendsgiving”. Aside from the tons of cleaning I’m doing I decided I would prep today by at least baking the dessert and getting it out of the way. For that, I bring my love of lemons. I really do love them and I’m not sure why I’m so obsessed but it’s definitely a thing. Here’s a sweet treat for you to try at home as well!

What is required of you:

-1/2 cups self rising flour

-1 cup caster sugar (or plain sugar if that’s all you have)

-1 tbsp. baking powder

-1/2 cup vegetable oil

-3/4 cup water

-Zest from 1 lemon

-Juice from half the lemon


-2/3 cup powdered sugar

-Juice from half the lemon


Preheat your oven to 375 degrees F. Start by mixing the sugar, flour, baking powder, and lemon zest into a large mixing bowl. Then add the oil, water, and lemon juice.

Grease a baking tin and pour the mixture in. Then pop into the oven and set a timer for 30mins (40mins depending on your oven).


Use a tooth pick to check and make sure it’s done as it should pull out clean (ha). Then let it sit for a good 10-20mins and cool.


Combine the lemon juice and powder sugar to make the icing, very easy.


Have your cat periodically judge you, not as easy.


Then drizzle your icing onto your cake! I’m having this tomorrow so it actual may be terrible but I won’t know till then. I’ll be blogging tomorrow about all the food I’m making so stay tuned!!
