The Healthiest Taco I’ve Ever Made

Because some days I want to be a skinny b*tch

I’ve mentioned before in my lazy fish taco recipe that I really love tacos. BV (before vegan) I ate the unhealthiest tacos that I ordered from a Mexican restaurant that delivered till 2am in NYC. It was ground beef, fried tortilla, lots of guacamole, lots of sour cream, and maybe a cilantro leaf….maybe. I don’t normally focus on calories but on nutrients and I’m going to give you the break down though for this one using Cron-O-Meter.

What you need to stay lean:

-1 head of butter lettuce washed

-1/4 avocado

-4 tbsp. vegan sour cream (I used Tofutti)

-1 packet of taco seasoning (or your own spices for preference)

-1 bunch of cilantro (only using about 1/4th of it)

-1 lime

-Salt and pepper

-Sriracha to taste

-Non stick spray


We’re going to make a cilantro-lime cream sauce. I used my ninja nutri cup that came with the blender and combined the juice from the lime, sour cream, and cilantro. I love cilantro so I left it a bit chunky. Also don’t cut off the stems! They have tons of flavor. And as a bonus tip roll your lime out on the table prior to cutting and you’ll get the juice out much easier:)


If possible use a non stick frying pan and some non stick spray to avoid the added oil calories. 1 tbsp. of oil is roughly 120-ish calories….yeah I just ruined your day I know.

Add the taco seasoning and spices to your “meat” and let it cook for about 5 minutes.


Season your beautiful avocado with a pinch of salt and pepper and then do thin slices going long ways. One slice per taco (about all it can hold) so you only need 1/4 avocado to create 4 tacos.

Layer to pieces of butter lettuce on top of each other and place into a taco stand (which is really handy with this type of taco). Then fill with your avocado slice, “beef”, and top with the cilantro-lime cream. I then added some sriracha for some added deliciousness.


4 of these come out to 340 kcal total. 28.9g carbohydrates, 18.4g fat, and 17.5g protein. They are super delicious and light and crisp and YAAAASSS.

Also this dish is packed with vitamin A and K:)
