Super Quick Spring Rolls

A new lazy vegan go-to. 

I used to really love spring rolls. My husband loves Chinese takeout and it was one of the few things I would order. I don’t get them anymore because you don’t really know if it’s prepared vegan. Since I already had rice paper wrappers from my recipe making incredible bacon I thought I would give it a shot making them.

What you need: Makes 8 Rolls

-8 rice paper wrappers

-5 leaves of red cabbage sliced small

-1 scallion sliced

-1 carrot shredded

-1/2 cup vegan beef or vegetable mince

-1/4 tsp sea salt

-1 tbsp. sesame oil

-1 tbsp. rice wine vinegar

-Tamari or soy sauce for dipping

Gather all of your ingredients except for the rice paper wrappers and fry in a pan on medium high heat until the cabbage had softened.

Although I took detailed pictures showing you how to wrap these things….I then looked at the back of the packaging and promptly said “well f$%^”. So you get how to wrap them pretty simply from this. It’s not hard at all. I added about 1tbsp of filling per wrap.

You have a few options for cooking these. You can use a bamboo steamer or fry in a pan. I opted to try them in my airfryer. Which didn’t get them as golden brown as typical frying…and they kind of looks like grubs. But they taste yummy with no extra oil:)
