If you are not watching Stranger Things then you might be the type of person who doesn’t watch Game of Thrones. That type of person doesn’t care about the passions of the popular culture. I was once you. Nearing 30 now I confidently watch this crap and embrace it like 12 year old me would have.
No spoiler but Eleven loooooves Eggos. So I decided to make this dish and make it vegan. Here’s how.
For the actual eggo recipe see my easy breakfast waffles entry. Only difference was I did not add nutmeg or cinnamon. This recipe will more help you with making a vegan chocolate sauce and vegan coconut whip cream. I don’t really want to eat this mound of f$%@ing calories. But the two recipes are great to have on hand for other things you may want to make in the future!
For yo chocolate saaaaaauce:
-1/4 cup melted coconut oil
-1/2 cup almond milk
-1 cup vegan cocoa powder
-1/2 cup maple syrup
Melt your coconut oil in a microwave to properly measure out the amount you need. Add that, the maple syrup, and almond milk to a sauce pan on the stove on high. Whisk and let it cook down just a bit. Start adding the cocoa powder 1 tbsp. at a time and whisk in. Cook until a thick syrup like consistency.
For the coconut WHIP!:
-1 small can coconut cream (keep in the freezer for 30 minutes prior to use)
-1/2 cup powdered sugar
-2 tsp pure vanilla extract
Take your ingredients and whip out that handy immersion blender. Blend on low until you get a whipped consistency.
The only challenges I faced which you can see in the picture was moving fast enough until my whipped cream just became cream. Eh…I didn’t want to waste food for the photo so just imagine it’s glory.
For the candies I went to a shop in Brooklyn called Haymakers Corner Shop. They are a vegan deli. I love them. You should too if you live in NYC.
Then plate with some old Christmas lights and you’ve got a dish to enjoy while you watch the journeys into the upside down.
