Squash and Basil Paccheri

Don’t squash this recipe idea yet!

Honest moment. Butchering this squash was a pain in the a$$. The pumpkin was nothing compared to this, partly due to the fact you roast the pumpkin to make puree. And that wasn’t the end goal for the squash….only took me 45 minutes to skin, gut, and dice it. The rest of the recipe was really quick. Therefore you should probably buy prepared squash to save yourself the f%$^ing exhaustion.

I refuse to buy a clever. All hail the multi-use bread knife.

What you need for dinner: Serves 4 bowls

-1/2 squash skinned, gutted, and diced

-1/2 cup vegan parmesan + some for optional garnish

-1 packet of paccheri pasta

-1 bunch of fresh basil

-7 cloves of garlic sliced

-2 teaspoons pepper

-juice from 1 lemon

-1/4 cup olive oil

-1/4 tsp salt

Get a pot of water on the stove to start boiling for the pasta, add the pasta once you have a rolling boil and cook until al dente. While the pasta is cooking take a large  non stick frying pan and heat all of the olive oil and add your garlic on medium/high. Sauté for about 5 minutes until slightly brown. Now you can add all of your squash with the salt and pepper. Let this cook down until you get a sticky consistency about 15 minutes.

Very happy with the Follow Your Heart Vegan Parm:)

Using a spider or strainer pull out the pasta and add to your frying pan with 1/2 cup of the pasta water. Add the lemon juice and vegan parmesan, incorporate everything and cook down the water till you get a nice thick sauce covering the pasta.

Last step toss in the basil and serve. This is a great warm harvest type dish perfect for this f#$^ing unseasonably cold weather in NYC.

Manchie Murloco//Kitten Taco aka Boo Boo aka Jaboo

I really like to name my cats….anyway this little dude came from the shelter I previously worked at and was pulled by one of my favorite rescue Anjellicle Cats . I worked with the owner of the rescue and offered to “babysit” him when he was a bottle baby.

He was stupid cute.

Then Hubz fell in love and we got another cat. Our last cat. Really hope it’s our last cat. Otherwise there is going to need to be a nutritional index for cat fur consumption.
