Red Wine Reduction “Sausage” & Thyme Potato Crisp // Contest time!!

When you find “meat” in the freezer. Make dinner.


Hubz was not impressed by the Pad Thai. He is a “meat and potatoes” kind of guy. He also can’t cook. I think I win in this struggle but regardless I am happy when I make dishes he enjoys. I found this “sausage” in my freezer and got to brainstorming. Coming up with a recipe of things I already had in my home. Here’s what I created.

What you should always have on hand duh..:

-1 cup red wine (rest should be consumed for polyphenols and resveratrol)

-2 cups arugula

-1 red onion small diced

-1 package of “sausage” sliced

-2 tbsp. fresh thyme

-1 russet potato sliced (not thin enough to be a potato chip)

-3 tbsp. olive oil

-2 tbsp. vegan butter

-2 cloves of garlic minced

-Salt and fresh ground pepper to taste


I used my Philips Airfryer to make this. I wanted it to be like a potato disk, but not a chip. I sliced them and then tossed them with 1 tbsp. of olive oil, fresh thyme, salt and pepper. They came out reeeally good and it only took them about 25 minutes to fry.


In a large frying pan set on medium/high heat add 2tbsp olive oil, garlic, and red onion. Cook until the onion starts to brown just a little. Then add your “sausage” and let it cook for 3 minutes. After that you can add your red wine reduction and cook for an additional 5 minutes.

The red wine reduction is quite simple. Set the wine on the stove to boil and let it reduce from 1 cup to about 1/4 cup (make sure to whisk every so often) then add the vegan butter and mix it together. This takes about 10-15 minutes so start it prior to the sautéing the “meat” and veggies.

Now you can take the pan off of the heat and toss in your arugula and season to taste with your salt and pepper. redwine2

Last night was a one of the coldest nights so far this fall and this was a perfect dish to accompany that and our horror movie marathon. I love fall and food. Life is good right now.

The reason for this prize is part of why I hated f%&^ing zesting is because my mom gave me that damn zester 8 years ago and it was a piece of crap then.
