A much healthier alternative.
I used to really love bacon back in the day. Oddly it hasn’t been a craving of mine since I went vegan and although my mind has a memory of what it was like, most store bought fake bacon does not cover it. This however does…it’s similar to eating just the crispy part of the bacon and it’s quite enjoyable!
What you need when you don’t want to hurt a cute little piggy:
– Rice Paper (same used for spring rolls) 4 sheets for 8 slices
– 1/2 tsp Liquid smoke
-3 tbsp. Tamari (or soy sauce)
-2 tbsp. Nutritional Yeast
-2 tbsp. Vegetable oil
-1/2 tbsp. Maple syrup
-1/4 tsp Smoked paprika
-Fresh ground pepper to taste
-Salt to taste
For the Kale Salad:
-3 Cups cut and washed kale
-1/2 tsp vegan mayo
-Juice from 1 lemon
-1/4 cup fresh dill
-1 ripe avocado
-salt and pepper to taste
For the tofu scramble see my recipe here. Only thing I didn’t differently was I used black salt. Try it!!
This sauce is seriously f%^ing delicious
Preheat your oven to 400 degrees f. In a small bowl whisk together the tamari, vegetable oil, nutritional yeast, salt, pepper, smoked paprika, liquid smoke, and maple syrup. Set aside and try not to drink it.
Its not a bathmat. Its food.
For $10 on Amazon I got 3 huge packs of rice paper. Take 2 sheets and keep them together and then dip into the water until saturated but not clumping together.
On a cutting board layout out your wet rice paper sheets and using kitchen shears cut a strip and then run the strip through the sauce you prepared. After that you can lay them down on a baking sheet lined with parchment paper. As an FYI it’s really important you have kitchen shears as a tool in your kitchen. These are different from other scissors as they can be separated and washed thoroughly. Also if you own any long hair animal you know at some point you used your regular scissor to trim butt fur…you know it.
Now once you’ve made as much bacon as you like. Set it aside and start your tofu scramble.
When you are at the part where you are cooking down any liquids in the scramble you can start your kale salad. Just combine all the ingredients and massage!
Now you can put your bacon in. Let it cook for about 7-10 minutes or until crispy.
Once your bacon is crisp, you can plate all of your food (scramble should be done by now).
It was really delicious and crispy…looked so much like bacon and the taste is on point! This is a much healthier version of bacon even if you’re a meat it eater…. just look how this turned out!
The kale salad was also bangin’. It’s refreshing and light next to the savory bacon and eggs. I loved this breakfast so much and highly recommend you try it one weekend!!!
