They’re mini and cute as f*%&
Hubz and I realized we’ve been married six months as of Friday. We planned on going out to dinner to celebrate. But the really wonderful thing about our marriage is we both LOVE bailing on going out. With that we stayed home, we ordered some take out, and watched Witchboard 2 from 1993 because when I was 5 I thought it was a great movie. I felt particularly nice this morning and decided I would make him something sweet for breakfast. Also a mini waffle iron and I met and fell in love yesterday, but I swear I only got it for Hubz…
This is a recipe I made for fall flavored waffle.
What you need to convince your partner you’re romantic:
-Mini waffle iron (or large one, you’ll just get less in that case)
-Frozen or fresh fruit of your choosing
-1&1/4 cup flour
-1&1/4 cup almond milk
-2tsp vanilla extract
-1/4 tsp salt
-2tbsp coconut oil
-1/4 tsp nutmeg
-1/2 tsp cinnamon
-2 tsp baking powder
-3 tbsp. organic sugar
-Non stick cooking spray
-Organic powdered sugar (optional)
Preheat your waffle iron. Combine all of your dry ingredients and give it a toss with a fork or whisk. Try not to get flour on the f&*#ing cat. Begin to add your wet ingredients and whisk until smooth with no lumps. Clean the flour off the f%^#ing cat.
It’s easiest if you transfer your mix from a bowl into a measuring cup or something easy to pour out of. Make sure your iron is heated all the way through and then pour the batter into the iron just to the point it covers the base. Close the top and wait about 2-4 minutes per waffle.
I tossed a little powdered sugar, popped on some frozen berries, and drizzled maple syrup, because I plan on kill my husband with a heart attack. (Not really).
The recipe made 6 mini waffles for us. And they are quite tasty! I’m going to try and make some hash brown waffles in the future as I’m not a huge sweets person.
I brought the stack of waffles to wake Hubz up. That was 3 hours ago….he’s still a sleep.
