Fancy Blueberry & Lemon Cake

I saw a video from Natasha’s Kitchen making this and although I am not a cake person…I really wanted to try to make it vegan. Plus Hubz has a sweet tooth so this seemed like a win/win.

Everything you shall need to create bakery art:

– 1 Cup Organic Sugar

-1 Cup Vegan Sour Cream

-1/2 Cup Vegetable Oil

-1 tsp Vanilla Extract

-16 oz of Blueberries

-2 Egg servings of Vegan Egg from Follow Your Heart

-1/4 tsp Salt

-1 Medium/Large Lemon (zested…yeeeup)

-1/2 tbsp. Corn Starch

-2 tsp Baking Soda

-Powdered Sugar for dusting

*Why organic sugar? Well a lot of refined sugar is processed with animal bone char. Yup. Gross. Organic however isn’t.*


For me if I don’t pile everything I need I will sure as sh*t forget something

After gathering all your ingredients preheat your oven to 375 degrees F. Put 3/4 of a cup of water into the fridge (for the vegan egg). Then take a 9 inch Springform Pan and grease it (either with non stick spray or vegan butter). Then line the bottom with parchment paper.


This didn’t look quite right so I trimmed the paper around the bottom. Peppi was not impressed.

I have a KitchenAid Stand Mixer which I do not use often since I do not bake often. I will say if you love to bake, this is a good investment piece. Take out your chilled water for the vegan egg, add fake egg, mix. I use my protein shaker bottle because…I only use it for cooking if that says anything. Put the egg into the mixer with the 1 cup of sugar. Mix on high till frothy.



Best way I’ve found to whisk dry ingredients is with a fork, not a whisk. You’re Welcome.

Mix in separate bowl your baking powder and flour. Then with the mixer on low speed spoon it in so that all of it get incorporated.


I bought a new zester and it’s AMAZING!!

Finish by adding 1/2 tbsp. of zest and the juice of the lemon.


Take the corn starch, a little lemon juice and toss the blueberries. I found these easiest when using my hands.


Pour half of the mixture into the pan and then top with half the blueberries. Slightly pat the blueberries so they are stuck half way into the mixture. Then pour the remaining half of the mix into the pan and layer again with blueberries.

In my sh*t oven it took 60 minutes to bake. Check after 45 minutes and see if you need more time.


I threw some powdered sugar, leftover berries, and leftover zest to be fancy as f@#$

Make sure to wait 20 minutes after removing it from the oven. Then you can release the spring, dust with powdered sugar. And serve!
