Because how the f%^# are chicken wings so small anyway
The first time I tried making this I attempted using gluten free panko. In other words I made buffalo mud dripping from Cauliflower…still ate it though…
WHAT YOU GONNA BRING TO THE GAME:
-1 head of cauliflower, with the flowers trimmed into bite size pieces
-franks red hot (you’ll be surprised how much you need)
-1 cup all purpose flour
-2 cups unsweetened almond milk
-2 cups Italian bread crumbs (vegan ones)
-ranch or blue cheese dip of your choice (daiya and follow your heart make great ones)
I find it easiest to trim the flowers using a paring knife
Preheat your oven to 400 degrees f and line a baking sheet with parchment paper.
Once your cauliflower is prepped take a large mixing bowl and add the flour and almond milk together and whisk. I prefer to whisk with a fork in most situations. I find a large whisk is very challenging unless I’m working over the stove and need it. You’ll want the dredge (wet ingredients) to be like a pancake mixture, drippy but coats the back of a spoon.

Tapping off any excess dredge, take another bowl of breadcrumbs and dip into there. Then transfer to a baking sheet.

Bake in the oven for 10-14 minutes. Once they look a little crisp pull them out and now take an even smaller bowl (YAY DISHES!!) with franks red hot. Dip into sauce, pop back onto tray. Once done put all the little faux wings back into the oven for 5-7 minutes.
Cut up some celery to look like a fancy b*tch. Pour some ranch into a bowl. Then plate once yo wingz iz done!

This serves about 4 people as an appetizer. 2 people as a weird a$$ entrée. Or 1 crazy cat lady who skipped breakfast and lunch, don’t know who’d that would be though…
