A Very Hipster Breakfast!!

I didn’t even have to go to Brooklyn for this. 

Breakfast is a really important meal. Studies have shown if you don’t eat breakfast there is a 90% you’ll be “hangry” by lunch. Causing you to lash out on unsuspecting strangers and the like. To save your image (and soul) eat breakfast and eat well. Here’s an easy staple with some fancy hipster sh*t that didn’t take that long to make. It should take about 20 minutes IF you have an air fryer, I have one by Philips  If you don’t have one it may take a little longer to do in the oven and you could opt to skip them.

What you need to make breakfast for 2 (or 1 I won’t tell…)

For Tofu Scramble:

-1 shallot diced

-1 clove of garlic minced

-1/2 cup arugula (or spinach)

-1 tbsp. coconut oil

-1 tomato diced

-2 tbsp nutritional yeast

-1/2 tsp turmeric

-1/2 tsp paprika

-1/4 tsp salt

-1 block extra firm tofu

-1 green onion sliced

-1/4 cup unsweetened almond, soy, or coconut milk

-black pepper to taste

For Avocado Toast:

-2 slices whole grain bread

-1/2 avocado sliced

-1 tsp olive oil

– 1/4 tsp crushed red pepper

-black pepper to taste

-salt to taste

For Potatoes:

-chipotle seasoning

– 1 potato (I used a red one I had) peeled and diced

I’m a bit of a spice hoarder…

Toss them potatoes in some chipotle spice. Set the air fryer to 360 degrees, pop ’em in the basket, and put it on for 18 minutes. While those cook move on to the tofu.

Prep your tofu by draining the water from the package and pressing out as much excess water from the block with paper towels as possible. Get a large frying pan hot on medium/high heat with the coconut oil going, once hot add your shallot and garlic until softened. Once your shallot starts to look translucent take the tofu and crumble it in between your hands into the frying pan. Continue to stir until the tofu just starts to brown at some parts. Now add in your nutritional yeast, turmeric, paprika, and salt. Continue to cook until the tofu looks well seasoned (or like scramble eggs a-ha!).

Pop your bread slices  into your toaster oven and then go back to the tofu. Add your milk to the mixture and let it cook down till it looks like creamy scramble eggs and not colored tofu swimming in a mud bath. Once you feel it’s almost done toss in your arugula, green onion, and tomato.

Add your sliced avocado to your toast fanning it out. Drizzle the olive oil on top and season with the crushed red pepper, black pepper, and salt.


I don’t understand the fascination, but I have appreciation for the holy avocado.

Scoop out your serving of tofu scramble, add your avocado toast and some potatoes to have a really hearty breakfast that is sure to keep you full through out the day. I also love sriracha on my tofu scramble…bonus tip.


Don’t be a f$%ing hipster. Just eat like one.

    1. I love it because it’s a great macro balance of carbs, protein, and fat. As a vegan I feel like starting my day with all of those really satiates me till lunch:)
